Veggie Lasagne

Ok, another "new" recipe for us ... I actually made it up and am proud enough that I'll share it. I am terrible at remembering to take meat out of the freezer, and with baby-sitting now, I want FAST meals that I can prepare in the morning so I just have to pop it into the oven on time. After school with 4 kids here is kinda crazy, cooking then doesn't seem to work well, but I still want to get nutritious meals into us all.
So.... here's what I did;

Veggie Lasagne

-1 cup frozen mixed veggies (corn, peas, and carrots)
-1 jar tomato sauce (spaghetti sauce)
-1 tsp each, basil, oregano, parsley
(depending on how the sauce is already seasoned, you may not need the extra spices)
-fresh mushrooms, sliced
-1 egg, beaten

-6 lasagne noodles (prepared according to package)

-shredded cheese

~Mix veggies and seasoning with sauce and egg. Layer noodles, sauce mixture, and cheese in a greased 9x13 dish. Bake covered with tinfoil for 50 minutes, and uncovered another 15-20 at 375 F.

Serve with salad and/or bread.


My kids ate it fairly well, same with my niece and nephew...
Dustin and I really liked it, and the one-dish thing rocked again. Plus it was pretty fast to make.
